A LITTLE OF THIS & A LITTLE OF THAT

Sometimes the best recipes are accidental! A little of this and a little of that! This is my new favorite...

INGREDIENTS

  • 1 LB hot sausage

  • 1/2 medium onion diced

  • A handful of cherry tomatoes

  • Halved Baby spinach (3-4 cups)

  • 12 eggs

  • Well beaten Cheese (I’m savoring Gorgonzola right now)

DIRECTIONS

  1. Brown sausage in a 12 in skillet (I used cast iron)

  2. Add in onions and cook 3ish minutes longer

  3. Throw in spinach and allow to wilt down

  4. Toss in tomatoes and cook a minute or two

  5. Pour in eggs and mix in with other items

  6. Bake on 375 degrees for approximately 20 minutes or until set

  7. Top with cheese if desired!
